Cold Boiled Fish a LA Vinaigrette

Ingredients

Directions

  1. Remove the head and skin from the whole fish and place it in the center of a serving dish.

  2. Finely chop the cold hard-boiled eggs with a silver knife or spoon to avoid discoloration.

  3. Sprinkle the chopped eggs over the fish.

  4. Garnish with small lettuce leaves, watercress, or slices of cold boiled potatoes or beets around the fish.

  5. Add parsley sprigs for decoration.

  6. Serve the vinaigrette sauce in a separate dish.

  7. Pour a spoonful of the vinaigrette over the fish when serving.
