Ingredients

Directions

  1. Make a dressing by mixing bread crumbs, butter, pepper, and coarse sea salt to form a paste.

  2. Fill the shad with the mixture and sew it up.

  3. Place the shad lengthwise in a baking pan with a little water and 1 ounce of butter.

  4. Fill the space between the fish and the sides of the pan with slices of raw potatoes.

  5. Add 1 tablespoon of prepared flour to the gravy and serve the fish and potatoes together.
