Ice-creams, Ices and Frozen Fruits

Ingredients

Directions

  1. Use only the best materials for making ice cream.

  2. Pour the mixture into the tin can and place the beater inside.

  3. Cover the can and place it in the tub, ensuring it fits properly.

  4. Pack the tub with large pieces of broken ice in a canvas bag, pounding it fine.

  5. Layer ice and salt in the tub, starting with a thick layer of ice, then a thin layer of salt, until full.

  6. Pack down solidly with a paddle or piece of wood.

  7. After turning the crank a few times, add more salt and ice, and pack down again.

  8. Continue until the tub is full, using about 3 pints of salt and 10 quarts of ice for a gallon can.

  9. Do not let the water off, as it helps with freezing.

  10. Turn the crank for 20 minutes, starting slowly and increasing speed for the last 10 minutes.

  11. When frozen, turn back the cross-piece, wipe off salt and ice, and remove the cover carefully.
