Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and cooks, thickening the milk into a smooth, creamy custard body.
Eggs
Coagulate when heated, adding richness and helping the custard set and hold structure.
Milk
Forms the liquid base that the tapioca swells in and the custard is built on.
Sugar
Adds sweetness and lowers the freezing point, keeping the frozen custard softer.
Whipped cream
Adds air and fat, making the frozen texture lighter and creamier.
Butter
Adds fat for richness and a smoother, more tender mouthfeel.

The step that matters

Stir in the eggs off the heat. Beaten eggs can scramble if they hit very hot liquid too fast. Removing the pan from heat before or while adding them keeps the custard smooth rather than grainy.
