Baked Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Peel the tops of the mushrooms and cut off a portion of the stalks.

  2. Wipe them carefully with a piece of flannel dipped in salt.

  3. Lay the mushrooms in a tin dish and place a small piece of butter on top of each.

  4. Season with pepper and coarse sea salt.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 20 minutes to ½ hour.

  2. Arrange the baked mushrooms in the center of a hot dish, pour sauce around them, and serve immediately.

What each ingredient does

Mushrooms
Form the main body of the dish and soften as they cook, releasing their juices.
Butter
Adds fat and richness, coating the mushrooms and helping them brown as they bake.
