Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Wash and remove the stalks from the mushrooms.

  2. Simmer the minced onion in butter for 5 minutes.

  3. Add water, bread crumbs, minced mushroom stalks, pepper, and salt, then simmer for 3 to 4 minutes.

Stuff and bake

  1. Fill the hollow of the mushrooms with the mixture.

  2. Sprinkle dry bread crumbs over the top and brown in a hot oven at 400°F (200°C) for 5 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Their hollow caps hold the filling, and their flesh softens and releases moisture as they cook.
Butter
Carries the onion's flavour and adds richness to the filling.
Bread crumbs
Absorb the liquid and onion juices to form a soft, cohesive stuffing, and the dry crumbs on top brown.
Onion
Adds savoury sweetness and aroma as it softens in butter.

The step that matters

Sprinkle dry bread crumbs over the top and brown in a hot oven. The filling is already moist, so the top needs a hot oven and dry crumbs to crisp and brown rather than steam. The record gives only a 5-minute time, so watch the colour.

Swap the onion

How well each one fits the dish's main ingredients (mushroom, butter, bread, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against mushroom, butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
