What each ingredient does

Thin flank beef
Forms the main body of the dish; long simmering turns its tough fibers tender.
Nutmeg
Adds warm, sweet aromatic flavor that defines the spiced crust.
Cloves
Contributes strong aromatic warmth that penetrates the meat's surface.
Cayenne
Adds gentle heat that balances the sweetness of the warm spices.

The step that matters

Keep the beef simmering gently in cold-start water for the full 4 hours. Starting in cold water and holding a gentle simmer lets heat penetrate slowly, so the muscle fibers soften without seizing or drying out. A hard boil toughens the outer meat and can leave the centre underdone or the surface ragged.

Swap the mace

How well each one fits the dish's main ingredients (beef, nutmeg, ginger, clove, pepper):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against beef, nutmeg, ginger, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
