Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Trim the veal into a nice shape and lard the top.

  2. In a braising kettle or saucepan, layer thin slices of pork, sliced carrot, celery, parsley, and the onion with cloves.

  3. Place the veal on top of the vegetables and sprinkle with pepper and coarse sea salt.

Braise

  1. Fill the kettle with boiling stock to cover the meat.

  2. Cover with a tight lid and bake in a 350°F (175°C) oven for 2½ hours.

What each ingredient does

Veal fillet
Forms the main body of the dish, becoming tender and moist during long, gentle braising.
Pork
Lines the pan and adds savory fat and flavor that enriches the braising liquid.
Boiling stock
Surrounds the meat with moist heat, keeping it from drying out while it cooks.
Carrot
Releases sweetness and aromatic flavor into the braising liquid as it cooks.
Onion
Adds savory depth and aroma to the braising liquid as it softens.

The step that matters

Cover with a tight lid and bake. A tight lid traps steam so the veal braises in moist heat rather than drying out. Keeping the oven at a gentle 350°F lets collagen break down slowly, giving tender meat.

Swap the onion

How well each one fits the dish's main ingredients (veal, pork, carrot, celery, parsley, clove, pepper):

  1. Turnipfits better
  2. Capsicumfits better
