Baked Mutton Chops and Potatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash, peel, and slice the potatoes thinly, then rinse in 2 or 3 waters.

  2. Layer the potatoes in a baking dish, sprinkling salt and pepper between each layer.

  3. Trim excess fat from the loin chops and shape them with a skewer.

Bake and serve

  1. Add enough cold water to prevent burning and place in a 400°F (200°C) oven on the top shelf to brown.

  2. Once the potatoes are browned, place the chops on top, adding more salt, pepper, and water if needed.

  3. Move the dish to a cooler part of the oven and cook for about 30 minutes.

  4. When the chops are browned on top, turn them to brown the other side.

  5. If the potatoes dry out, add a little hot water gently at the corner of the dish.

  6. Serve in the same dish to maintain appearance.

What each ingredient does

Potatoes
Form the base layer, absorbing seasoning and softening as they cook beneath the chops.
Loin mutton chops
Provide the main meat, browning on the surface while staying tender in the oven's heat.
Black pepper
Adds sharp, aromatic heat that seasons the potato layers and meat.

The step that matters

Keeping the potatoes moist while they brown. Potatoes brown on top in dry oven heat and can scorch or dry out. Cold water added before baking and a little hot water later keeps the base moist while the surface browns.

Swap the potato

How well each one fits the dish's main ingredients (pepper, mutton):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits about as well
  4. Potatothe original

Fit is the average pairing score against pepper, mutton. Candidates are from the same food group and used in at least 100 recipes.
