What each ingredient does

Flour
Thickens the butter and stock into a smooth sauce by forming a roux.
Butter
Forms the roux with the flour and adds richness to the sauce.
White stock or milk
Forms the liquid base of the sauce that the roux thickens.
Button mushrooms
Add earthy flavour to the sauce as it simmers.

The step that matters

Stirring the stock into the roux. Adding liquid gradually while stirring keeps the flour evenly dispersed, so the sauce becomes smooth instead of lumpy.
