Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavor and bulk of the forcemeat once simmered and minced.
Bread crumbs
Absorb moisture and give the mixture body so it holds its shape.
Egg yolks
Bind the mixture and help it set when cooked.
Butter
Adds richness and fat, contributing to a tender texture and flavor.
Mushroom gravy
Adds moisture and savory flavor to reach the right consistency.

The step that matters

Drain the mushrooms before mixing. Mushrooms release a lot of water when cooked. If it is not drained and cooled well, the mixture becomes too wet to hold its shape and may turn soggy or fall apart when poached or fried.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, bread, nutmeg, egg):

  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, bread, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
