Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the minced chicken and, beaten, form the coating that holds the crumbs.
Finely crumbed bread
Absorbs moisture and firms the mixture so the croquettes hold their shape.
Remains of a roast or boiled chicken or turkey
Provides the main body and flavor of the croquettes.
Lard
Fries the outside to a light brown crust through direct, hot contact.

The step that matters

Fry in boiling lard until light brown. The lard must be hot enough to crisp the coating quickly. If it is too cool, the croquettes absorb grease and turn heavy and soggy before the crust sets.
