What each ingredient does

Cabbage
Forms the crisp bulk of the pickle that holds up to the brine.
Vinegar
Acidity that preserves the cabbage and gives it its sharp, tangy flavor.
Coarse sea salt
Draws water out of the cabbage, leaving it crisp and less watery.
Horseradish
Adds a sharp, pungent heat that mellows as the pickle sits.
