What each ingredient does

Green tomatoes
Provide the bulk of the pickle and soften as they cook in the syrup.
Coarse sea salt
Draws moisture out of the tomatoes, firming them and reducing their water content.
Sugar
Adds sweetness and helps preserve the pickle by binding water.
Vinegar
Adds acidity that gives the pickle its sharp flavor and helps preserve it.
Ground cloves
Contributes warm, aromatic spice flavor.
