What each ingredient does

Tongue cooking liquor
Forms the meaty base of the soup, carrying most of its flavor and body.
Onion
Releases sweetness and savory aroma into the broth during long simmering.
Celery
Adds a fresh, aromatic vegetable flavor to the long-simmered broth.
Rice
Releases starch as it cooks, thickening the soup and adding body.
Curry powder
Adds warm, aromatic spice flavor that develops as it simmers in the soup.

The step that matters

Add the curry powder ten minutes before serving. Curry powder needs gentle heat to release its fat-soluble aromatic compounds. Adding it too late leaves a raw, dusty taste, and boiling it hard can make it bitter.

Swap the onion

How well each one fits the dish's main ingredients (celery, rice):

  1. Carrotfits better
  2. Tomatofits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against celery, rice. Candidates are from the same food group and used in at least 100 recipes.
