What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Butter
Adds richness and carries flavour when frying the onion and thickening the base.
Flour
Thickens the soup slightly when cooked briefly in melted butter.
Rice
Adds body and makes the soup more substantial.
Baking soda
Neutralises some of the tomato acidity, mellowing the flavour.

The step that matters

Adding the baking soda. Baking soda reacts with tomato acid and can make the soup foam and taste soapy if overused. Add only the small measured amount, stirring in well, and taste before serving.
