Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions, carrots, turnips
Vegetables that give the soup its body and sweetness as they simmer and break down.
Tomatoes
Add acidity and body, and the rubbed-through pulp thickens the soup.
Cabbage
Adds bulk and mild flavour as it cooks down into the broth.
Butter and flour
Creamed together and stirred in, they thicken the soup and add richness.

The step that matters

Rubbing the vegetables through the sieve. Pressing the cooked vegetables through leaves their starch and pulp in the liquid, which thickens the soup. Straining only the liquid would leave it thin and watery.

Swap the tomato

How well each one fits the dish's main ingredients (onion, carrot, turnip, cabbage, butter, flour, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Tomatothe original

Fit is the average pairing score against onion, carrot, turnip, cabbage, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
