Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish, cooking down to a tender interior inside the crust.
Beaten egg
Acts as a binder so the crumb coating adheres to each slice.
Rolled crackers or bread crumbs
Forms a crisp, browned crust when fried in butter.
Butter
Conducts heat for frying and adds fat that promotes browning and flavor.

The step that matters

Salting and drying the slices. Salting draws out moisture and bitterness from the eggplant. Patting the slices dry removes surface water so the egg and crumbs stick and the slices brown rather than steam in the butter.
