What each ingredient does

Tapioca
Swells during soaking and baking to give the pudding its body and chewy texture.
Egg whites
Beaten to stiff peaks and spread on top, they set and brown to form a light topping.
Sugar
Adds sweetness and helps the fruit caramelise lightly during baking.
Raisins
Add concentrated sweetness and chewy bits that soften in the baked pudding.
Pineapple or apples
Contribute moisture and acidity, with fruit flavour that cuts through the sweetness.

The step that matters

Beating the egg whites to stiff peaks. Egg whites hold air only when fully whipped and free of fat or yolk. Under-beaten whites will weep or flatten on the pudding, and over-beaten whites turn dry and grainy, so the topping may not brown evenly.

Swap the pineapple
