Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pudding

  1. Soak the tapioca in the milk overnight.

  2. Steam the soaked tapioca in a double boiler until clear.

  3. Add salt, sugar, cornstarch, egg yolks, and vanilla.

  4. Cook until thick.

  5. Pour into a pudding dish.

Top and bake

  1. Beat the egg whites until stiff, then fold in sugar.

  2. Spread the folded mixture over the pudding.

  3. Bake in a 350°F (175°C) oven until the top is delicately browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in milk and thickens the pudding as it steams, giving it a soft, slightly chewy body.
Egg yolks
Thicken the custard base as they cook and add richness to the pudding.
Egg whites
Whipped into a stiff foam that gives the topping lift and a light texture.
Cornstarch
Thickens the pudding base so it sets smoothly when cooked.
Sugar
Sweetens the pudding and the topping, and helps stabilise the whipped whites.

The step that matters

Cook until thick. Egg yolks and cornstarch thicken only when heated enough, but overheating can curdle the yolks. Cook gently and stir to keep the custard smooth.
