Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Its fat and water trap air as it whips, forming the light, thick body of the cream.
Egg whites
Beaten whites add airy lightness and help the whipped cream hold its foam.
Vanilla
Adds aroma and a rounded sweet flavor to the whipped cream.

The step that matters

Gently fold the beaten egg whites into the whipped cream. Stirring or folding vigorously knocks air out of the foam, making the cream heavy and dense. Gentle folding keeps the trapped air that gives the dessert its lightness.

Swap the vanilla

How well each one fits the dish's main ingredients (cream, egg):

  1. Vanillathe original
  2. Raspberryfits about as well
  3. Strawberryfits less well
  4. Coconutfits less well

Fit is the average pairing score against cream, egg. Candidates are from the same food group and used in at least 100 recipes.
