What each ingredient does

Strawberries
Provide the main flavor and color, and their juice gives the syrup its body.
Simple syrup
Adds sweetness and helps preserve the syrup while giving it a pourable body.

The step that matters

Boil gently for 1 hour. Gentle heat reduces the juice and concentrates its flavor without scorching the sugar or fruit. A hard boil can darken the syrup and dull the fresh strawberry taste.
