What each ingredient does

Strawberries
Supply the fruit flavor and juice that dissolves the sugar into syrup.
Sugar
Draws water out of the fruit and, as it concentrates, thickens into a preserving syrup.

The step that matters

Stirring from the bottom while boiling. Sugar syrup that sits on the hot base of the pan can scorch and taste bitter. Stirring from the bottom keeps the sugar moving and heat evenly distributed as the mixture boils and thickens.
