Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and maple-like flavour, and forms the bulk of the candy.
Butter
Adds fat for a smoother, richer texture in the finished cream.

The step that matters

Beating the mixture. Beating after the syrup cools stirs in tiny sugar crystals, which gives a creamy rather than hard texture. Beating while the syrup is still too hot can produce a grainy or set-too-fast result.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
