Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the base of the taffy and sets firm as the syrup cools.
Vinegar
Acidity helps prevent the sugar from crystallising, keeping the taffy smooth.
Butter
Adds fat that softens the texture and keeps the taffy from sticking.
Glycerine
Holds moisture in the candy so it stays soft and chewy.
Cream of tartar
Acid that further discourages sugar crystals, keeping the texture smooth.

The step that matters

Boil without stirring. Stirring hot sugar syrup can trigger crystallisation, leaving grainy taffy. Boiling undisturbed lets the sugar dissolve and concentrate evenly until the syrup reaches the right stage.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar, butter, cream):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Raspberryfits less well
  4. Apricotfits less well

Fit is the average pairing score against sugar, vinegar, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
