Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Carefully remove the skin from the salmon steaks and wash them.

  2. Lay the steaks on a towel to dry.

  3. Grease the broiler and place the steaks in it.

  4. Set the broiler in a 350°F (175°C) oven with the door ajar for 30 minutes.

  5. Brown the steaks over the coals for a short time.

  6. Spread butter over the steaks and serve with lemon quarters.
