Why it works: Allspice and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Directions
Prepare the beef
Sprinkle the inside of the beef thickly with allspice, cloves, sage, summer savory, salt, and pepper.
Roll the beef tightly and tie it with strong cord.

Plunge the beef into boiling water with 1 tablespoon of salt.
Turn the meat several times and boil until tender.

What each ingredient does
- Beef
- Forms the main body of the dish, becoming tender through long moist boiling.
- Ground allspice
- Adds warm aromatic spice flavour that penetrates the meat rolled around it.
- Ground cloves
- Contributes strong aromatic warmth that flavours the meat and cooking liquid.
- Ground sage
- Adds herbal, earthy aroma that complements the richness of the beef.
- Ground summer savory
- Adds a peppery, thyme-like herbal aroma to the seasoned meat.
The step that matters
Boiling until tender. Beef needs a long, gentle simmer so connective tissue breaks down; boiling too hard can toughen the outer meat and cause uneven cooking.
Swap the clove
