What each ingredient does

Egg yolks
Provide the rich, creamy base that forms the filling's body and flavor.
Mustard
Adds sharp, pungent flavor that cuts the richness of the yolks.
Butter
Adds fat that softens the yolk mixture into a smooth, spreadable cream.
Vinegar
Adds acidity that brightens the filling and balances the rich yolks.

The step that matters

Beating the yolks until smooth. Yolks must be beaten fine and combined thoroughly with butter so the filling becomes smooth rather than grainy or lumpy. Cooked yolks are crumbly, so the fat and acid must be worked in gradually to form an even cream.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, mustard, butter, pepper, vinegar):

  1. Horseradishfits better
  2. Shallotfits about as well
  3. Capsicumfits about as well
  4. Lettucethe original

Fit is the average pairing score against egg, mustard, butter, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
