What each ingredient does

Russian hygienic caviar
Provides the main flavour and the salty, briny filling at the centre of each bite.
Bread
Forms the crisp base that holds the filling.
Clarified butter
Fries the bread, giving it a golden colour and a rich, nutty crispness.
Shallots
Add a mild, sharp onion note that complements the caviar.

The step that matters

Fill the bread only after it has cooled. Fried bread still holds heat and steam. Filling it while warm can soften the croûte and make the caviar lose its texture, so the bread should be fully cooled first.
