What each ingredient does

Anchovies
Provide the salty, savoury flavour that defines the filling.
Egg yolks
Add richness and body, helping the pounded filling hold together and spread smoothly.
Butter
Adds fat and creaminess, carrying flavour and helping bind the filling.
Parmesan cheese
Adds savoury, salty depth and helps the filling taste rounded.

The step that matters

Pound the filling until smooth. Anchovies, butter, and yolks must be fully broken down so the paste is even and spreadable. Lumps leave pockets of strong fish flavour and tear the thin bread when spread.

Swap the radish

How well each one fits the dish's main ingredients (butter, egg, pepper, parmesan cheese, bread, parsley):

  1. Asparagusfits better
  2. Spinachfits better
  3. Capsicumfits better
  4. Radishthe original

Fit is the average pairing score against butter, egg, pepper, parmesan cheese, bread, parsley. Candidates are from the same food group and used in at least 100 recipes.
