Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Melt the butter in a saucepan.

  2. Stir in the flour and cook for a few minutes.

  3. Add the white stock and cream, then the chopped onion.

  4. Season with salt, pepper, nutmeg, and cayenne.

  5. Mix in the crab meat and bring to a boil.

  6. Stir in the raw egg and cook until thickened.

  7. Pour the mixture onto a flat dish to cool.

Fill and bake

  1. Fill the crab shells with the mixture.

  2. Brush with oiled butter and egg, then sprinkle with bread crumbs.

  3. Bake at 400°F (200°C) until light brown.

Serve

  1. Serve on folded napkins, garnished with parsley.

What each ingredient does

Butter
Enriches the filling with fat and flavor, and browns the crumb topping.
Flour
Thickens the butter and stock into a smooth base for the filling.
White stock
Provides the liquid that forms the body of the creamy filling.
Cream
Adds richness and moisture, giving the filling a softer texture.
Crab meat
Forms the main protein and flavor of the filling.
Raw egg
Sets when heated, binding the filling so it holds its shape.

The step that matters

Cooking the raw egg into the filling. Egg proteins set as they heat, so the filling thickens and binds. Cook it gently until thick, since overheating can make the egg curdle and turn the filling grainy.
