Savoury Marrow on Toast

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the marrow

  1. Extract the marrow from the beef bones and cut it into small squares.

  2. Blanch the marrow, then strain and drain it.

Assemble the toast

  1. Prepare slices of buttered toast and spread anchovy paste on top.

  2. Cut the toast into neat squares or rounds.

  3. Place 2-3 pieces of marrow on each piece of toast and break it with a fork.

  4. Sprinkle with chopped parsley, chives, salt, and a dusting of cayenne pepper.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 5 minutes.

  2. Drizzle with a few drops of liquid meat glaze and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef bones
Provide the marrow, which becomes soft, rich and buttery when heated.
Anchovy paste
Adds a salty, savoury depth that complements the rich marrow.
Liquid meat glaze
Adds concentrated meaty savour and a glossy finish.

The step that matters

Baking the marrow. Marrow is fat-rich and melts quickly; if it is overheated it can run off the toast and become greasy. Baking only briefly, just until the marrow softens, keeps it creamy and holding its shape on the toast.

Swap the chive

How well each one fits the dish's main ingredients (beef, anchovy, parsley, pepper, meat):

  1. Carrotfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Chivethe original

Fit is the average pairing score against beef, anchovy, parsley, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
