Cauliflower Au Gratin

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Break the cooked cauliflower into sprays.

  2. Press the cauliflower into a small bowl to shape it.

  3. Butter a round gratin dish and place the shaped cauliflower in it.

  4. Cover the cauliflower with a thick layer of cold bechamel sauce.

  5. Season with coarse sea salt and black pepper.

  6. Strew grated Gruyere cheese and bread crumbs thickly over the top.

  7. Dot with small bits of butter.

  8. Bake in a 400°F (200°C) oven until light brown.
