What each ingredient does

Eggs
Form the structure of the dish and provide the stuffed white shells and yolk garnish.
Clarified butter
Fries the croutons, adding richness and browning for a crisp base.
Cooked spinach
Forms the main filling, giving the dish its green color and savory flavor.
Cream
Adds moisture and smoothness to the spinach filling.
Bread
Provides a crisp, golden base that supports each stuffed egg half.

The step that matters

Heat the spinach mixture for a few minutes while stirring. Stirring keeps the cream-enriched spinach from scorching or separating on the base of the pan, so the filling stays smooth and spoonable.
