What each ingredient does

Lobster meat
Provides the main sweet, firm seafood body of the salad.
Cold fish (salmon or turbot)
Adds firm, flaky seafood texture that holds its shape in layers.
Stiff mayonnaise sauce
Binds and moistens the layers with rich fat, giving a creamy coating.
Apples
Contribute crisp texture and mild sweetness that balance the rich seafood.
Ripe tomatoes
Add juicy acidity and moisture to the layered salad.
Lemon juice
Adds bright acidity that seasons the seafood and sharpens the flavor.

The step that matters

Preventing the apples from browning. Cut apple flesh oxidises quickly and turns brown on contact with air. Keeping the slices in cold water slows this, and drying them well before mixing keeps the salad from becoming watery and diluting the mayonnaise.
