Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Browns to give the sauce its nutty, toasted flavour and rich fat base.
- Flour
- Thickens the water into a smooth, lightly bound sauce.
- Lemon juice
- Adds acidity that brightens the rich, browned butter.
The step that matters
Warm the butter in a frying pan until it turns brown.. Butter solids darken quickly once the water has evaporated, so the butter can move from browned to burnt in seconds. Burnt butter tastes bitter and spoils the whole sauce, so watch it closely and remove it from the heat at the right colour.
