Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Morella cherries
Provide the main fruit flavour and colour that the rum and sugar draw out.
New england rum
Extracts and preserves the cherry flavour while acting as the liquid base.
Brown sugar
Adds sweetness and molasses flavour, and it dissolves into the liquid to balance the rum.
Whole cloves or allspice
Adds warm aromatic spice flavour to the liquid after boiling.

The step that matters

Stir in the brown sugar until dissolved. Brown sugar must fully dissolve into the warm liquid so the sweetness blends evenly. Undissolved crystals sink and leave the bounce unevenly sweet and grainy.

Swap the clove

How well each one fits the dish's main ingredients (rum, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Clovethe original

Fit is the average pairing score against rum, sugar. Candidates are from the same food group and used in at least 100 recipes.
