Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Build the flavour base of the soup as they soften and release sweetness.
Carrots
Add sweetness and body to the broth as they cook down.
Turnips
Contribute bulk and a mild, earthy flavour to the soup.
Cabbage
Adds bulk and a soft, vegetal texture when simmered.
Tomatoes
Add acidity and body to the soup as they break down.
Butter and flour
Form a roux that thickens the soup and adds richness.

The step that matters

Rubbing the vegetables through the sieve. Pressing the cooked vegetables through the sieve breaks them down and releases starch, which thickens the soup and gives it a smooth body. Skipping this leaves the soup thin and chunky.

Swap the tomato

How well each one fits the dish's main ingredients (onion, carrot, turnip, cabbage, butter, flour, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Tomatothe original

Fit is the average pairing score against onion, carrot, turnip, cabbage, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
