Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a dressing for turkey, adding 1 egg and some chopped onion.

  2. Stuff the fish with the dressing and wrap it tightly with twine.

Bake

  1. Place the fish in a baking pan, add ½ pint of water, and dot with small lumps of butter.

  2. Dredge the fish with flour.

  3. Bake at 400°F (200°C) for 45 minutes to 1 hour, basting carefully.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large white fish or pickerel
Forms the main body of the dish, cooking through as the baked centrepiece.
Dressing for turkey
Stuffs the fish, adding moisture and flavour as it cooks inside the fish.
Egg
Binds the dressing so it holds together inside the fish.
Butter
Adds richness and moisture, melting over the fish as it bakes.
Flour
Dusted on the fish, it helps form a light surface that browns in the oven.

The step that matters

Wrap the fish tightly and baste carefully. Tight wrapping keeps the stuffed fish compact so it cooks evenly, while careful basting keeps the surface moist. Moisture loss from overbaking dries out delicate fish flesh, so watch the timing within the stated range.

Swap the onion

How well each one fits the dish's main ingredients (fish, turkey, egg, butter, flour):

  1. Leekfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against fish, turkey, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
