  2. Spread a thick layer of butter in a fish pan and lay the fish in it.

  3. Season the fish with coarse sea salt.

  4. Pour two well-beaten eggs over the fish and dredge with flour.

Bake and serve

  1. Bake at 350°F (175°C) for 45 minutes, basting with butter and water.

  2. Garnish the fish with parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish and cooks through in the oven.
Butter
Adds fat and moisture, and helps the fish brown and stay tender during baking.
Eggs
Bind the flour to the fish and set to form a light coating.
Flour
Dredges the fish so the egg coating holds and browns in the oven.

The step that matters

Basting with butter and water. Basting during the 45-minute bake replaces moisture lost from the surface, helping the fish stay moist while the coating browns.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter, egg, flour):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against fish, butter, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
