Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender and rich during long, moist simmering.
Potatoes
Thicken the broth as their starch releases and soften into the stew.
Salt pork
Adds fat and savory flavor that seasons the broth and meat.

The step that matters

Reduce heat and simmer. Once the kettle is covered and hot, the liquid must be kept at a gentle simmer. A hard boil toughens the meat proteins and can break up the potatoes, while a gentle simmer lets the veal become tender.

Swap the potato

How well each one fits the dish's main ingredients (veal, pepper, pork):

  1. Capsicumfits better

  3. Tomatofits about as well
  4. Carrotfits about as well

Fit is the average pairing score against veal, pepper, pork. Candidates are from the same food group and used in at least 100 recipes.
