Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, mix the chopped veal, salt pork, eggs, rolled crackers, salt, pepper, butter, and sage until well combined.

  3. Shape the mixture into a loaf.

Bake and serve

  1. Place ½ pint of water in a roasting pan and add the loaf.

  2. Sprinkle cracker crumbs over the top and add small lumps of butter.

  3. Bake for 1 hour, basting occasionally if using an open pan.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty body that the loaf is built around.
Salt pork
Adds fat and moisture so the lean veal stays juicy.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Rolled crackers
Absorb juices and add structure and body to the loaf.

The step that matters

Basting an open pan. Basting during baking, if the pan is open, adds moisture to the surface and helps keep the loaf from drying out during the hour in the oven.

Swap the sage

How well each one fits the dish's main ingredients (veal, pork, egg, pepper, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against veal, pork, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
