Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled chicken or turkey
Provides the main protein and bulk of the salad.
Hard boiled egg yolks
Rubbed to a powder and blended into the dressing, giving it body and a rich, creamy texture.
Salad oil
Adds fat that carries flavour and gives the dressing a smooth, silky mouthfeel.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the yolks and oil.
White sugar
Softens the sharpness of the vinegar and rounds out the dressing's flavour.
Celery or cabbage
Adds crisp texture that contrasts with the soft meat and dressing.

The step that matters

Rubbing the egg yolks to a fine powder. Yolks that stay in lumps will not blend smoothly into the oil and vinegar, leaving a grainy, uneven dressing. Breaking them down fully lets them emulsify with the oil and disperse evenly through the salad.

Swap the celery

How well each one fits the dish's main ingredients (chicken, cucumber, egg, pepper, mustard, sugar, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against chicken, cucumber, egg, pepper, mustard, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
