Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main bulk and meaty texture of the salad.
Egg yolks
Emulsify the oil and vinegar, giving the dressing a thick, creamy body.
Whole egg
Adds further binding and richness to the dressing.
Salad oil
Adds fat and smoothness, carrying flavour through the dressing.
Mixed mustard
Adds sharpness and helps stabilise the emulsion in the dressing.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the eggs and oil.

The step that matters

Stir in the egg mixture before the vinegar boils. Eggs thicken when heated, but if they get too hot they scramble and curdle. Adding them to warm, not boiling, vinegar and stirring constantly lets the yolks thicken smoothly into a dressing.

Swap the celery

How well each one fits the dish's main ingredients (chicken, meat, egg, mustard, pepper, vinegar):

  1. Tarragonfits better
  2. Thymefits about as well
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, meat, egg, mustard, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
