Cream Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine sour cream, sugar, raisins, egg, and salt. Mix until well combined.

Assemble and bake

  1. Place one pie crust in a pie dish and pour the filling into it.

  2. Cover with the second pie crust and seal the edges. Cut slits in the top crust for steam to escape.

  3. Bake for 30-35 minutes or until the crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour cream
Adds moisture and tang, giving the filling a creamy, rich body.
Sugar
Sweetens the filling and helps it brown lightly in the oven.
Egg
Binds the filling and helps it set as it bakes.
Raisins
Add chewy texture and concentrated sweetness throughout the filling.

The step that matters

Cutting steam slits in the top crust. Steam from the moist sour cream filling needs an escape route. Without slits, pressure can build and lift or split the top crust during baking.

Swap the raisin

How well each one fits the dish's main ingredients (cream, sugar, egg):

  1. Vanillafits better
  2. Raisinthe original
  3. Strawberryfits about as well
  4. Raspberryfits about as well

Fit is the average pairing score against cream, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
