Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C) and line a cake pan with white paper.

Make the batter

  1. In a large bowl, beat the butter and sugar together until creamy.

  2. Add the rose water and grated nutmeg, then mix in the egg yolks and part of the flour.

  3. Fold in the egg whites and the remaining flour gently.

  4. Finally, add the chopped citron, lightly floured, and mix until combined.

Bake

  1. Pour the batter into the prepared pan and bake for about 2 to 2.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give a tender, rich crumb.
Eggs
Egg yolks enrich the batter, while whipped whites add lift and structure.
All-purpose flour
Provides the starch and gluten that set the cake's structure as it bakes.
Sugar
Sweetens the cake and helps create a fine, creamy batter texture when beaten with butter.
Citron
Adds aromatic, tangy fruit pieces throughout the cake.

The step that matters

Fold in the egg whites and remaining flour gently. Egg whites hold air that gives the cake its lift. Vigorous mixing deflates them and knits the flour's gluten, leading to a dense, tough cake.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, flour, egg, rose):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Allspicefits less well

Fit is the average pairing score against butter, sugar, flour, egg, rose. Candidates are from the same food group and used in at least 100 recipes.
