Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. In a furnace kettle, combine sweet cream, sugar, and vanilla extract.

  2. Heat until the water in the outer kettle boils, then remove from heat.

Add macaroons and freeze

  1. Brown the macaroons in a 350°F (175°C) oven, cool, and roll into a fine powder.

  2. Stir the powdered macaroons into the cream mixture.

  3. Once cold, freeze the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Provides fat and richness, giving the frozen ice cream a smooth, creamy texture.
Sugar
Adds sweetness and keeps the frozen texture softer by lowering the freezing point.
Macaroons
Add toasted flavor and a fine crumb texture when browned and powdered.

The step that matters

Cooling the mixture before freezing. Freezing a warm or unchilled mixture slows freezing and allows larger ice crystals to form, which makes the ice cream grainy. Cooling it fully first gives a smoother result.
