Roast Beef

Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Do not wash the roast; wipe it with a damp cloth.

  2. Place the beef in a dry pan and set it in a hot oven at 400°F (200°C).

Roast

  1. Turn the roast several times to sear it evenly and retain juices.

  2. For a 2‑rib roast, cook for 1 hour for rare; for 3 ribs, 1.5 hours; for larger roasts, 2 hours.

  3. Twenty minutes before the cooking time is up, sprinkle with salt and pepper.

  4. Do not add water; the fat will brown in the pan for gravy.

Make the gravy

  1. When done, remove the roast and set the pan on the stove.

  2. Add 1 to 2 tablespoons of flour to the pan and stir until smooth and brown.

  3. Gradually add hot water until the gravy reaches the desired thickness.

Carve and serve

  1. When carving, cut across the grain of the beef.

  2. If the beef is not salty enough, add a little salt to the juices on the platter and dip the slices before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provide the meat and rendered fat that browns in the pan and forms the base of the gravy.
Flour
Thickens the pan juices and fat into a smooth gravy as it cooks.
Hot water
Dilutes the browned pan drippings and loosens them into a thinnable gravy.

The step that matters

Sear the roast by turning it evenly. Turning the roast several times lets all sides brown and form a flavorful crust while helping retain juices inside, which affects both taste and moisture.
