Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shank
Provides the main body of meat and gelatin-rich juices that help the dish set.
Solid meat
Adds bulk and meaty texture to the shredded filling.
Hard-boiled eggs
Add firm texture and visible contrast when sliced in the base of the dish.
Lemon juice
Adds acidity that brightens the flavour of the seasoned meat.

The step that matters

Boil down the cooking liquid and pour it over the meat. Reducing the broth concentrates its collagen-derived gelatin, so it sets firmly when cooled. A thin, under-reduced liquid may not hold the pressed shape.
