Oyster Dressing for Turkey or Chicken

Ingredients

Directions

Prepare the bread

  1. Soak enough dry bread bits in cold water until soft, then squeeze out excess water.

  2. Place the soaked bread in a dish and add coarse sea salt, black pepper, and enough sweet milk to make a thin mixture.

Add the oysters and season the bird

  1. To the mixture, add 3 eggs, 1 teaspoon black pepper, 1 teaspoon coarse sea salt, and 1 quart oysters.

  2. Rub a little coarse sea salt and black pepper inside the turkey or chicken before adding the dressing.

  3. Do not overstuff the fowl as the dressing will swell.

Bake

  1. Place any remaining dressing in a greased pan, adding a little gravy and a few bits of butter on top.

  2. Bake for 1 hour until the top is browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dry bread bits
Form the body of the dressing, soaking up the liquid to become soft and absorbent.
3 eggs
Bind the mixture together so it sets into a cohesive dressing when baked.
Sweet milk
Moistens the bread and keeps the dressing tender as it bakes.
Oysters
Add a briny, savory flavor that defines the dressing.
Butter
Adds richness and helps the top brown during baking.

The step that matters

Do not overstuff the fowl. Dressing expands as it cooks. Packing it tightly inside the bird leaves no room for swelling, which can make it dense and uneven, and can slow the centre from reaching a safe temperature.
